- 1 tbsp of olive oil
- 4 tbsps of olive CannaOil
- 2 tsps toasted sesame oil (or 1 full tbsp if you want to increase the sesame flavour)
- 2 tbsp earth balance butter (sticks) or butter of your choice
- 1 pound sliced portobello mushrooms
- 1 pound sliced cremini mushrooms
- 1 cup pearl onions (if frozen, thaw)
- 1 medium carrot peeled and finely diced.
- 1 small onion, julienned
- 3 tbsps of finely chopped green onions.
- 2 tsps of fresh thyme leaves lightly chopped.
- 3 cloves garlic, minced.
- 1 ½ cup full-bodied red wine (organic if possible!)
- 2 ¼ cups organic vegetable broth
- 2 tbsps of organic tomato paste
- 1 ½ tbsps of nutritional yeast
- 1 ½ tbsps of white whole-wheat flour
- Sea salt and cracked black pepper, to taste.
- 1 tbsp of toasted sesame seeds
- 2 cups cooked quinoa, farro, or noodles for serving (creamy mashed potatoes work wonderfully as well)

Once caramelised, remove from the pot, and set aside.
- Increase the heat to high and deglaze the pot with 1/4 cup of vegetable broth. Add 1 tablespoon of olive CannaOil. In batches, sear the mushrooms and pearl onions until they acquire a light colour, approximately 3 minutes per batch. Remove from the pot and set aside.
- Reduce the heat to medium and add 2 tablespoons of olive CannaOil, carrots, green onions, thyme, a pinch of sea salt, and a few grinds of black pepper. Cook for about 10 minutes, stirring occasionally. Then, add garlic and cook for an additional 2 minutes.
- Deglaze the pot with red wine, making sure to scrape off any fond (the delicious bits) stuck to the bottom. Increase the heat to medium-high and reduce the wine by half. Stir in tomato paste and broth, followed by the caramelised onions, seared mushrooms, and pearl onions. Bring the mixture to a boil, then reduce the heat to a simmer. Add nutritional yeast and the final tablespoon of olive CannaOil. Let it simmer for approximately 15 more minutes.
- Use a fork to combine the remaining tablespoon of earth balance butter (or butter of your choice) with flour, then stir it into the stew. Add toasted sesame oil and the remaining teaspoon of thyme leaves. Simmer for an additional 10 minutes or until the stew reaches the desired thickness, with a glossy, semi-thick saucy texture. Taste and season with sea salt and cracked black pepper as needed.
