Ingredients: For the Crust: 

  • 1 ½ cups all-purpose flour 
  • ½ tsp of salt 
  • ½ cup cold vegan butter, cut into small cubes 
  • 3-4 tbsps of ice-cold water 

For the Filling: 

  • 1 block (14 oz) firm tofu, drained 
  • 2 tbsps of nutritional yeast 
  • 1 tbsp of cornstarch 
  • 1 tbsp of fresh lemon juice 
  • 1 tsp of garlic powder 
  • 1 tsp of onion powder 
  • ½ tsp of turmeric 
  • ½ tsp of dried thyme 
  • Salt and pepper to taste 
  • 2 tbsps of cannabis-infused olive oil (dose according to preference) 
  • 1 small onion finely chopped. 
  • 1 bell pepper, diced. 
  • 1 cup spinach leaves, chopped. 
  • ½ cup cherry tomatoes, halved 

Requirements: 

  • 1 x large mixing bowl 
  • 1 x whisk 
  • 1 x rolling pin. 
  • 1 x 9-inch pie dish 
  • 1 x fork 
  • 1 x medium frying pan 
  • 1 x sharp chopping knife 
  • 1 x cutting board. 

Instructions: 

  1. Let’s start by preparing the crust. In a mixing bowl, combine the all-purpose flour and salt. Add the cold vegan butter cubes and use a fork or pastry cutter to cut the butter into the flour until the mixture resembles coarse crumbs. 
  2. Gradually add ice-cold water, one tablespoon at a time, and mix until the dough comes together. Be careful not to overmix. Shape the dough into a ball, wrap it in cling film, and refrigerate for at least 30 minutes. Let the dough chill out—it needs a break before the baking fun begins. 
  3. Preheat the oven to 180°C (350°F). Roll out the chilled dough on a lightly floured surface until it’s large enough to fit a 9-inch pie dish. Carefully transfer the dough to the pie dish and press it evenly into the bottom and sides. Give it a gentle poke with a fork—quiche loves ventilation. 
  4. In a bowl, crumble the drained tofu using your hands. Add nutritional yeast, cornstarch, lemon juice, garlic powder, onion powder, turmeric, dried thyme, salt, and pepper. Whisk everything together until well combined. This tofu mixture is the magical base of our quiche. 
  5. Heat cannabis-infused olive oil in a frying pan over medium heat. Add the chopped onion, diced bell pepper, and chopped spinach. Sauté them until the vegetables are tender and the flavours mingle together in harmonious deliciousness. 
  6. Add the sautéed vegetables to the tofu mixture and stir until they are evenly distributed. Feel free to dance around the kitchen while doing this—it adds to the flavour. 
  7. Pour the tofu and vegetable mixture into the prepared crust. Arrange the halved cherry tomatoes on top, creating a beautiful pattern that will make your quiche Instagram-worthy. 
  8. Pop the quiche into the preheated oven and bake for 35-40 minutes, or until the filling is set and the crust turns golden brown. The kitchen will be filled with an enticing aroma, making the wait even harder.
